I have long been a fan of Jamie Oliver's approach to healthy eating. While anyone can preach the virtues of a fresh healthy lifestyle, Jamie Oliver does it with such a lust for life, his enthusiasm is infectious!

Years ago, I first caught a glimpse of Jamie Oliver on his show the Naked Chef. He has since gone on to release many cookbooks, television series and has opened several restaurants all based on his no-fuss style of cooking. Whether you wish to use his recipes as they are or adapt them to fit your own style of cooking, a plethora of healthy recipes are available.

Salads

Salads are the easiest healthy recipes out there. Jamie Oliver's signature approach often includes an oversized platter for serving and a fresh vinaigrette with hand picked herbs. Salads can be served as a starter, with a main or as a meal itself if you add a little protein. My favourite show, Jamie at home often showed Oliver picking plants and herbs right out of his garden to make a salad using things like pea shoots, zucchini flowers and edible flowers.

Oliver's new show 30 Minute Meals is filled with time saving tips that help you cook spectacular mains in very little time, so you can eat healthy even on a hectic weekday. My favorite tip is so simple, yet so useful. Boil your kettle in advance and have it on the ready to accelerate anything you need to bring to a boil. Pan seared chicken, broiled and steamed fish and spanokopita are a few healthy recipes you can add to your roster of go-to dishes.

Stove top scalloped potatoes was featured on 30 Minute Meals...yum! I can't wait to try this recipe. Side dishes are easy to keep healthy if you stay away from heavy cream and butter and opt for olive oil and fresh herbs. Roasting vegetables is a flavorful way to eat veggies as a side dish. The veggies caramelize as they cook, which makes them irresistible.

Desserts by nature may not be considered 'healthy' but if you choose fresh seasonal fruit and pair it with the best ingredients you can find, these desserts are some of the better ones you can indulge in. I love the Meals in Minutes philosophy of dessert. Basic pantry staples mixed with fruit and/or ice cream are transformed into elegant, fast desserts to appease the sweet tooth with your post dinner tea or coffee. Think stewed berries with store-bought shortbread and vanilla ice cream.
